It's easy making scones with oil - you just mix it in with a fork so it resemble breadcrumbs; same result as when you rub in the fat/butter/margarine until it looks like breadcrumbs. You can use oil for most things, like pastry, cakes and muffins. It makes a lovely fruit crumble or crisp too. I've actually just made and eaten scones made with no fat at all (a first try of the recipe). They were soft and succulent and used apple sauce instead of fat. I don't advocate fat free actually as I think we need fat but when you want to indulge some more when perhaps you shouldn't, maybe it is a good idea. Anyway I found it fun to try and was extremely pleasantly surprised at what is possible. No dairy, no egg, no fat and low sugar but still a nice treat. I generally use soya milk to bind but any liquid of your choice is fine. I like to add a bit of apple cider vinegar to it to sour it a bit first. I always use 100% wholewheat flour now and my scones and muffins taste very good and rise nicely.

Well, Steph -- I didn't do all those things this weekend ; )
I'm tired too. Maybe that's why I write -- because misery loves company?

Wow, Katy. I am impressed. Not by the fact that you kept the kids focused and fed them something delicious, but by all the steps it took to get there (sprouting wheat, making coconut milk tonic, finding organic shortening). I get hungry and tired reading your blog. Nice job on the scones.
