		<description>Cathy, I&#039;m so glad you like it!  I was also really pleased with how it turned out; I had to go dairy-free while nursing my son, and at the time relied on many soy substitutes. It was winter, and as much as I wanted to like the soy hot chocolate, it was always just a mediocre substitute. The coconut milk really does get as close as you can to the texture and flavor of cream or whole milk -- I wish I&#039;d come across it three years ago!</description>

		<description>Thank you so much for this recipe. It&#039;s totally awesome! I have to be on a low-iodine diet for several weeks and can&#039;t have dairy or soy. But I&#039;ve been really wanting some hot chocolate because it&#039;s freezing outside! All the non-dairy recipes I could find online used soy milk, so when I saw  yours I got excited. And I just happened to have a can of coconut milk! Thanks so much! This hits the spot!</description>
